If your Apple 23" studio display can support composite or s-video, yes it can. I'm pretty sure the studio display has both those. The only issue is I don't think the Game Cube has a connector for s-video. I could be wrong. If you want to use s-video for any of those besides the X-360 (which i'm looking at the s-video connector right now), you may need to buy an adapter. If you need something extra for your Apple monitor go to www.apple.com or check your local Apple store. Other than that, i'd go to your local ebgames or gamestop and ask for the necessary cables! The Apple 23-in HD Cinema display is very pricey.
You are better off getting a flat panel (LCD or Plasma) TV.
